Former RB Leipzig Star Reveals How Ralf Rangnick Revolutionised His Diet and Career

Though he occasionally caused friction during his career—most notably at Manchester United—Ralf Rangnick has spent more than four decades as a manager nurturing and elevating a vast array of footballers.

Following his success in securing the 2. Bundesliga crown with Hannover 96, Rangnick engineered consecutive promotions at Hoffenheim, later guiding Schalke 04 to a DFB-Pokal triumph alongside a memorable run to the UEFA Champions League last four.

The crowning achievement of Rangnick’s career unfolded during his tenure as Director of Football across RB Leipzig and Red Bull Salzburg, where he was responsible for shaping the entire Red Bull football framework, establishing its scouting infrastructure, and directing global strategy before taking the reins as Leipzig manager in 2015.

Frequently hailed as the pioneer of ‘Gegenpressing’, Rangnick inspired an entire generation of German tacticians, including Thomas Tuchel, Julian Nagelsmann, Ralph Hasenhuttl, Marco Rose, and Roger Schmidt. His influence, however, extended beyond the dugout to inspire players such as Demme as well.

“I believe Rangnick taught me more than anyone about true professionalism. Even a decade ago, he handled every detail professionally, ensuring we received top-tier medical care, high-quality nutrition, and optimal recovery treatments,” Demme explained in an exclusive conversation with FourFourTwo.

Throughout a 16-year professional journey that featured appearances for Germany and saw him anchor Leipzig’s rise from the third tier to the Champions League, Demme played under prominent managers such as Nagelsmann, Schmidt, Joachim Low, and Luciano Spalletti. Even so, Rangnick left the deepest impression on him.

“He demanded absolute excellence at all times. I enjoyed the post-match nutrition he provided so much that I started preparing those identical meals following my workouts. While Nagelsmann was exceptionally tactical, my longest collaboration was with Rangnick, which is why I gained the most knowledge from him.”

Rangnick persuaded Demme to make the switch to Leipzig in January 2014 following a brief half-hour discussion at an airport, right as Paderborn were on the brink of reaching the top flight for the first time. For Demme, taking a temporary drop down proved to be a masterstroke, as he subsequently helped propel Leipzig through two promotions within three seasons.

Serving as the engine room in midfield, Demme helped solidify Leipzig’s status among the German elite, culminating in an appearance at the 2018/19 DFB-Pokal Final—which marked Rangnick’s swansong on the bench prior to stepping into his role as Red Bull’s Head of Sport and Development.

Demme spent only a short period playing under Rangnick’s successor, Nagelsmann, before transferring to Napoli in 2020. That career gamble delivered remarkable success, yielding the 2019/20 Coppa Italia—ending Napoli’s six-year silverware drought—and the 2022/23 Serie A title, which was the club’s first Scudetto in 33 years.

Although Demme has now retired following a final stint with Hertha Berlin, the 68-year-old Rangnick continues to thrive on the touchline. Shrugging off a challenging period at Manchester United, he is forging a fresh reputation with the Austrian national team, guiding them into the Euro 2024 last 16 and securing their first World Cup spot in nearly three decades.

Rangnick’s rigid standards and willingness to directly challenge high-profile figures meant he clashed with several players during his career, including Cristiano Ronaldo, Jesse Lingard, and Anthony Martial. This unyielding personality may help explain why sustained success at elite super-clubs ultimately eluded him.

While his stern approach alienated certain players, it served as vital inspiration and momentum for others. In Demme’s experience, Rangnick crafted the ideal formula to extract his maximum ability, leaving him with career guidance that proved just as enriching as the post-game meals he provided.
